The Original Caesar Salad
This recipe is for one of the most popular salads world wide - the Caesar Salad. It was invented in 1924 by an Italian-born Mexican, Caesar Cardini. He was living in San Diego and Tijuana at the time.

One night, he ran out of ingredients and invented this salad with what he had around.

Ingredients:
  • 2 heads Romaine lettuce
  • 2 lemons juiced
  • 1/2 cup olive oil
  • 2 egg yolks
  • Worcestershire sauce
  • black pepper
  • clove of garlic
  • 4 anchovy fillets(optional)
  • 1 tbs. Dijon mustard
  • 1/4 cup parmisiano
Directions:
Put all ingredients except the parmesan, lettuce and olive oil in a blender and process for 30 seconds.
With the blender running slowly, pour the olive oil in...very slowly....for the dressing to emusify.
That's it!

Put the dressing in the fridge until you need it.
Toss with romaine and add the cheese.
Presto! Easy and fast without any of the chemicals in the store bought versions.
