Giuseppe's on 28th Street

Here's a salad that a Sicilian friend of mine would make for me after a hard tennis match...I served this in the restaurant a few summers ago and is great when it's hot outside.

Ingredients:

• 1 juicy orange
• 1 tbs sliced black oil cured olives
• scallion greens sliced
• purchase the best Extra Virgin Olive Oil you can find
• sea salt and freshly ground black pepper

Directions:
Peel and slice an orange
Slice the scallion greens and the olives
Lay out the sliced oranges on a platter...and add a little sea salt and freshly ground black pepper
Add the scallions and olives
Sprinkle the Extra Virgin Olive Oil over the top

So simple....so good!
