Pere al Vino Rosso
Here's a simple but very elegant dessert...Pere al Vino Rosso...Poached Pears in Red Wine!
First, any good red wine will work. Since I lived in Tuscany, I use Chianti, but select one that you enjoy.
Ingredients:
Use a saucepan that is a good size for pears. With a knife, cut the bottom of the pears so they are flat and can stand up in the pot and later, on a plate. Place the pears in the pot and add a bottle of your favorite red wine. Next, add the sugar and add enough water to just reach the top of the pears. Bring to a boil and cook until the pears are soft. Test them with a knife after 30 to 40 minutes. When they are soft but still firm, remove the sauce pan from the heat and let cool down to room temperature before removing the pears with a slotted spoon. After they have cooled, remove the pears and then reduce the liquid until it is syrup. Serve each pear upright with some syrup spooned over the top. You can also whip some cream and serve it on the side. Enjoy this elegant dessert! Rich |
